Bistro Pedol digitises its wine list with Tastee

At Bistro Pedol, every wine on the list has won a medal at the Concours Mondial de Bruxelles. To present this selection of more than 70 references in a way that is engaging, visual and convincing, the restaurant turned to Tastee and its Catalog feature.

In Milan, Bistro Pedol continues a story that began in 1929 with the Pescheria Pedol, a historic fishmonger taken over in 2012 by Ugo Cosentino. The business gradually became a bistro, opening at the Mercato Centrale in 2021, then Piazza Wagner and Porta Nuova, before expanding towards Rapallo and Bolzano. From one address to the next, the same founding principle: a list of wines and spirits made up exclusively of medal-winning cuvées, more than 70 references in Milan alone.

It is a strong promise, but also a presentation challenge. Lining up names and medals says nothing about what is in the glass, and leaves the customer to choose blind or rely on the floor staff. So Bistro Pedol came to us with a simple question: how do we turn this standard into a real guide for the customer, so they choose by affinity of taste rather than by blind trust in a ranking?

From medal to taste: putting the competition's material to work

A medal from the Concours Mondial de Bruxelles is not just a score. To award it, the competition has every wine tasted blind by a jury made up solely of professionals, who write rich, detailed comments for each cuvée. It is this material, often invisible to the consumer, that gives a medal its value.

This is exactly what Tastee analyses and shapes. Rather than stopping at the metal awarded, each wine is presented through its taste: its dominant aromas, its structure, what sets it apart. The medal becomes a starting point towards a sensory description, not the only argument.

A wine list built from the competition's data

This presentation is powered by Catalog, the Tastee feature dedicated to sharing selections. The reports for each cuvée are imported directly from the Concours Mondial de Bruxelles database, then enriched with the information specific to a restaurant list: prices and serving formats. No re-entry, no tasting to redo: the juries' work during the competition becomes the basis of the list.

The result is a digital wine list, accessible through a single link and a QR code, designed to be read instantly on mobile. The customer scans, browses and chooses without having to ask the floor about every reference.

The wine list built for Bistro Pedol Porta Nuova currently brings together 74 wines. Each sheet combines the expected markers and the descriptors that make the difference:

  • The estate, the cuvée and the vintage
  • The colour and type of wine
  • The appellation and country of origin, with its flag
  • The medal won at the Concours Mondial de Bruxelles
  • The dominant aromatic families, shown with a pictogram and an intensity bar, with their precise descriptors (walnut and almond, white peach, lychee)
  • The standout taste characteristics, specific to each cuvée (complexity, freshness and length for one; richness, delicacy and density for another)

The whole list is readable in 5 languages (French, English, Spanish, Italian, Portuguese), with no extra effort for the restaurant: enough to welcome an international clientele without multiplying paper versions.

Each sheet ends with two price blocks, ‘Takeaway’ and ‘On-site’, each with its price and volume. This dual display matches Bistro Pedol's hybrid positioning, both a fishmonger with retail sales and a bistro with table service.

A living list that grows with each new selection

Bistro Pedol's standard evolves with each selection. Adding a cuvée, removing a reference, adjusting a price or a vintage takes moments: the update is instant, with no reprinting, and the shared link stays the same. The list is never fixed; it grows continuously in line with the selections made and the latest competition results.

For the customer, it becomes a tool for discovery: they grasp at a glance what sets one medal-winning cuvée apart from another. For Bistro Pedol, it is the assurance of keeping a demanding selection alive over time, while staying in control of its list.
