Millions of tasting notes are written every year by wine professionals. These comments represent a textual description of the characteristics perceived by a taster at the time of tasting. They therefore contain a great deal of information about the taste of wines at a given time.
Unfortunately, these comments are not standardised, do not generally follow any uniform writing method, and contain a very wide range of specific oenological jargon. From the perspective of optimal exploitation (without loss of information, extrapolation or bias), these original conditions make the task extremely complex.
Manually transforming these textual comments in order to exploit them would be a titanic task, requiring an army of oenologists and a considerable amount of time. Tastee AI's role is to digitise the oenologist's skills so that this data can be processed automatically on a large scale.
